Great fish recipe... easy and delicious...
This one takes all of 15-20 minutes to prepare and is a hit in my home!
First I go the local fish market and buy a few of my favorite local filets - usually cod or sole here in New England.
Start cooking your favorite rice and while it's cooking you can easily finish the following recipe.
INGREDIENTS
** 3-4 filets of your favorite fish
** 2 Medium Sized Onions
** 2 Green Peppers
** Extra Virgin Olive Oil
** 2 small cans of peeled, crushed, or diced tomatoes - for more flavor I like to use Delmonte's Garlic and Herb.
** Salt and Pepper to taste.
Instructions
1. Cut two medium sized onions to your liking along with a green pepper or two.
2. Toss peppers and onions in a fry pan with a small amount of extra-virgin olive oil until transluscent - set aside - reserve oil in pan to cook fish.
3. Rinse filets in water, dry, then toss filets into pan and cook 5 minutes one side. Avoid turning the fish if it tends to fall apart.
4. Toss in a small can or two of peeled tomatoes (for extra flavor - buy the ones with seasoning already added - like garlic & herbs).
5. Add previously sauteed onions & peppers, seasonings to your taste.
6. Cover with lid and simmer for another 5-7 minutes - just long enough to cook fish completely.
7. Serve over your favorite rice and add a side of your favorite green veggie.
