I come from a long line of meat and potato eaters so when I found myself preparing this it even surprised me. If you’re vegetarian this meal is right up your alley. If not, give it a try anyways. It surprised me.
Egg Plant and Pasta
Ingredients
- 1 Cup Whole Wheat Pasta
- 1 Small Green Onion
- 1 small Plum Tomato
- 1 Glove Garlic
- 1lb Egg Plant
- Mozzarella Cheese
Instructions
1. Begin by preparing one cup whole wheat pasta as directed on box/bag
2. Chop one small green onion, one small plum tomato and a glove of garlic.
3. Peel approximately one pound egg plant and cut into bite size pieces.
4. In medium frying pan heat 1 table spoon olive oil and garlic over medium heat for 1 minute
5. Add egg plant and tomato to pan, reduce heat to medium/low and cook for 8 minutes. (Egg plant will be soft)
6. Add pepper and pasta to pan. Cook for another 2 minutes.
7. Sprinkle with mozzarella cheese and serve.
Total cooking time is about 15 minutes.
Since dinner was very healthy desert is warranted. If you live in Florida or California, strawberries are beginning to peak. Either go out to the farm to pick a dozen, nice way to get a little exercise, or hit the market.
Chocolate covered strawberries
1. Get a large and medium sauce pan.
2. Place 1 inch of water into large pan and bring to boil
3. Place 1 cup chocolate chips and 1 teaspoon of shortening into medium pan.
4. When water is boiling place medium pan into large pan.
5. Gently stir chocolate and shortening until melted.
6. Take strawberry and place tooth pick into stem.
7. Dip strawberry in chocolate.
8. Stick toothpick into piece of Styrofoam (strawberry will be upside down)
9. Place strawberries in refrigerator until chocolate is hard (about 2 hours)
Total prep time is about 20 minutes for a dozen strawberries.
The strawberries will look professionally prepared as no one will know how you covered them in chocolate without a flat spot. Don’t tell anyone the tooth pick and foam trick!
