back when I had TiVo you could tell it to record anything categorized as Triathlon... man I miss that setting ;)
if you have tivo or a dvr just search for triathlon.
the .vs network showed most of the ironman events last year.
The only problem is that the VS coverage is awful :(. They do an okay job on the Grand Tours and the spring classics, but the races they've covered recently (Tour of Ireland, Nature Valley Grand Prix) have been terrible, and I their tri coverage is kinda boring, too. Oh well, I guess it's better than nothing! :p

I agree with UFTrigator - VS coverage of tri races is very dull. The production values are very low and you just don't get the kind of camera angles you get at Kona. You don't see cameras in the water, no cameras on a pursuit motorcycle (TDF style). Cameras are just shoulder and point. No background stories of the athletes. It's a very dry and matter of fact coverage.
I like the tri coverage online at triathlon.org for the ITU races -- watched a couple this weekend. So good :)
A couple of races make it onto ABC/NBC and the like, not too long ago they had the Escape from Alacatraz tri. Coverage was mediocre almost no AG focus and lots of sponsor time.
