Does anyone know where I can get my hands on a catalog of mountain bike parts/accessories etc.? Or just off-road tri gear in general.

I just ask for company catalogues in my LBS, they usually will give them to you for free.

Just some basic upgrades like Deore XTR components, wheelsets, stem, and seat post. Trying to lighten it up for racing season.

Go SRAM X.0, I doubt you'll regret it. X-9 might not be as light, but the '07 stuff has many of the same features as the X.0 Both perform better than Shimano, in my experience.

Check out Pricepoint's Sette Line for stem and handle bar. I got the carbon flat bar for $40. Its the same thing as the Easton EC70 bar. And I also have the Sette Egde stem. Its the Richey Pro. Both have held up well over the past year. I wouldnt hesitate to try out their seatposts. In fact, I just got a road frame with an alum seatpost I will be swapping out for a Sette in a couple months.
