Numbness in toes
What kind of shoes and pedals are you using?
How stiff is the sole of your bike shoes?
Could be a problem with cleat placement. Perhaps your shoes are just a tad too small and as your feet swell your are having problems. The kind of cleat you are using may be putting pressure on the nerves.It could be any number of things really...read up as best you can and tinker with it yourself or hit the Local Bike Shop (LBS) for help.

You can check and see if it's a circulation issue by stopping and quickly checking your toenails. If you squeeze your toenail and it doesn't turn from white-to-red in a few seconds, you may not be getting adequate bloodflow.
If that's not the problem, and you've have had any trama to your feet recently, it could be a nerve problem. I was running a trail race once and came down hard on a sharp rock. My foot went numb on long runs for several weeks after that. I got it checked out by a doc, and they believed that I must have pinched a nerve, causing some damage.
Thanks for the resposnes. I haven''t had any injuries or other trauma that might casue it. I think I'll follow Anton's advice and begin to tinker with cleats and/or shoes.
Are you noticing pain in any part of the legs?
Do your pedals have sufficient float? I'm thinking that it could be pressure on some nerves. If your leg/foot is not being allowed to turn to a natural position then perhaps it's a nerve issue.
Otherwise, maybe it is circulatory and there's just enough pressure to cut off circulation over a period of time.

I'm still relatively new to the bike (been training on it for about 7 months). I recently began increasing my mileage to about 60-70 km per ride after taking a month or so off. At the end of the last couple rides my toes in both feet were numb. Any thoughts on what could be causing this? I've been wearing the same shoes since I started riding and have not changed anything else other than slightly more mileage.
