I'm pretty sure that you need 75mm, but you might get away with 60mm. Just remember that it still takes a sizable amount of valve sticking out to be able to get a seal on it to inflate the tire. I'd go ahead and get the longer one unless you know for sure that a 60mm will work instead.
As long as your pump can handle normal presta valves, you won't need an adapter, but you will need some tape (teflon, preferably) to seal the extender onto the valve. Just make a small cone of tape and put the smaller end into the extender before screwing it on. If you try just wrapping the tape around the valve itself, you'll probably mash it down (without getting a seal) when you screw on the extender.

I have HED-3's (LOVE 'EM!!!) - The 60's should be just fine. HED sells an adaptor that works great.
I tried using extenders without the adaptor and that didn't work well at all. So I just picked up a few adaptors - keep one with the bike always.

I'm looking to purchase a set of HED 3 Wheels. Do they require valve extensions? If so what length?
Will I require an adapter so that my track pump can attach to the valve when the tires are fitted?
