How fast do those calories become available for use?
As a diabetic, i know my blood sugar levels begin to rise just a few minutes after drinking gatorade.
Time flies like an arrow, fruit flies like a banana.
This might be wrong, but I have heard we cannot digest more than 500cal/hr....? True?

As far as availability of the calories, the more fluid the component it is the faster they go...
Picture this:
If I hook you to an IV line, and run some dextrose to your veins...it will take a fraction of a minute, 1 tops to start doing its effect...
Gatorade, if you have it 20 to 30 minutes prior a phisical activity, you´ll be good...The calories will be in you, by the time you start running...
Now gels are a little tricky...15 minutes before, and every 30 to 45 minutes of excersise...
The reason...the amount of carbs for every gram that you ingest...gels are more concentrated than sports drinks...that is why is better to chace them with water when you take them.
Does are rough estimates...there are going to be some differences between athlete A and B, so is good to experiment, with different formulations, and times...till´you find yours.

That is why is recomended to have your pre race meal maybe 2 hours before a race.
Now this sports formulations like gels and drinks are designed to be of easy absortion, more than a regular piece of bread or a browny for example....

...and also keep in mind that as the intensity of exercise goes up, the amount of calories your gut can absorb per hour goes down. Most people and coaches I know shoot for between 200-300 calories/hour average for an Ironman, for example.
You also want to look at the concentration...start to get above 8% and your absorbtion slows as well, thus one of the reasons for making sure to chug some water with that Gu.
