You can probably find an "old" Mavic rim on E-Bay for pretty cheap (50 bucks maybe?). I don't ride that brand but a buddy of mine has a 700c Mavic rim off of Ebay and uses it for exactly what you described.
I want to get a CHEAP rear wheel to use on my trainer. I can't seem to find them anywhere. I have the tire and the tubes, i just need some suggestions on where to look for the rims. I need
