Off season workouts

I have know completed my first season of muti-sports and am gearing up for next season. Now that I have a decent base but not great I have several goals I want to work on over the winter for next summer:

They are:

1) Compete in at least one Olympic distance triathlon. Preferably in June.

2) Increase speed and endurance with swimming

3) Increase endurance on the bike

4) Strengthen bike to run

5) Figure out a better nutritional plan, specifically during race time

My current plan consists of 2-3 days of swimming, 1-2 days of biking (spinning now), and 1-3 days or running and one days of strength training. I spend one of my swimming workouts doing intervals. Start at 5min X 3 fast pace and add a minute each month or so. Other workout is more endurance. Two intervals of about 10 min. One brick workout after 45 min spin class w/ 10 min or so of running. Running workouts one slower long run 4-6 miles, and one shorter fast run mixed in somewhere. Lifting consists of full body with single leg emphasis, sport specific and core. I pretty much eat a balanced diet and drink a lot of water, I dont get to anal about it.

I want to know what everyone thinks and if they have any suggestions based on my goals. I may also run a 1/2 or full marathon next year, it all depends on how I feel.
