Vegan triathletes?

Hey everyone I am just getting into the world of tri and I was wondering if there are any vegan triathletes out there like myself. If so what does your diet look like ( generally ) when your training.

Its a Vegan Diet book written by Brendan Brazier - He's an Ironman Triathlete and ultra distance runner. I'm not vegan but use many of the foods and recipes in my daily regimen.

Worth checking out aat your local book store or Whole foods.

I did the vegan thing for a year, and ran the disney marathon while vegan.

Here's an example of a days eating:

Breakfast:
Scrambled tofu with saffron (to make it look like eggs) and a bowl of oatmeal with soy milk and brown rice syrup.

Lunch:
Homemade hummus and tabouleh sandwhich with tomato and alfalfa sprouts on whole wheat pita bread.

Dinner:
Grilled portabello mushroom, brown rice and beans, steamed veggie, salad

Note: Also include fruit and supplemental vitamin B-12. I had a juicer at the time and would have a pre or post workout drink of fresh carrot/apple/parsley juice.
