Some darn fine chicken

My MIL got me a slow cooker for my b-day, and a lovely cookbook. Made the following the other night and it was great, so if you're easily bored with pollo, try this....

four chicken breasts on the bone (or the parts you prefer)
1 lb shallots (they're pricey, but onions work too)
1/2 cup balsamic vinegar
1/2 cup dry red wine
1 cup chicken broth

brown or bake the chicken
saute shallots/onions in a touch of canola oil (or butter)
add the wine, vinegar, and broth and bring to a boil then
put chicken and all in the slow cooker for a few hours and voila.

Don't be so easy on yourself 'cause this one might be all that you have left

I love my crock pot, but have steered away from chicken in it--it never seems to taste right. Maybe cause you "pre cooked it"?

I'll have to try that this week. Here is another good chicken recipe to try. It's a big hit with our family and pretty healthy. Not quite as quick and easy as Divamoms, but it freezes really well so you can make a batch or two, freeze and then pop one into the oven on a night you dont feel like cooking. If your kids wont eat spicy stuff, leave the chipotle chilies out of theirs.

Chipotle Chicken Enchiladas

Makes approx 12
Chopped cooked chicken breast (3) (seasoned with salt and pepper
frozen spinach (defrosted) (1/2 bag, defrosted)
chopped green onions (one bunch)
chopped yellow onion (1 medium)
8 block cream cheese, lite if you prefer
1 cup shredded cheddar/jack cheese
1 can chopped green chilies (mild)
1 chipotle chile, chopped (You can buy little cans of chipotle chilies in adobe sauce (in the mexican section of your local grocery store. Great flavor, but a little goes a long way!)
12 tortillas

Mix chicken thru green chilies and divide mixture evenly into tortillas. Roll up, sprinkle with a little extra cheese and bake at 350 for 30 min or so. A little salsa and sour cream are great on top when you serve it if you like. Enjoy!

My fav easy crock pot chicken is super simple- chicken breasts and salsa. Add veggies if you want. Slow cook all day. Add some low fat cheese and serve.

Life is short. Play hard and get dirty doing it.

And totally OT - I ran outside in shorts today for the first time this year!!!!

as you build into the season, consider shoes, socks & a top too! :p
