Super healthy. A great way to get lots of fruit and vegetables. Even adding a bit of extra virgin olive oil is generally okay because it's better than animal fats and adds a lot of richness. I don't really follow a recipe, but here's one I snagged online, modified closer to how I make it:
6 ripe tomatoes, peeled and chopped
1 purple onion, finely chopped
1 cucumber, peeled, seeded, chopped
1 sweet red bell pepper (or green) seeded and chopped
1 Serrano pepper, chopped fine
Half a bunch chopped fresh cilantro
6 clove garlic, minced
1/4 cup red wine vinegar
1/4 cup olive oil
2 Tbsp freshly squeezed lime juice
Sea Salt to taste
Tabasco sauce to taste
4 cups tomato juice
2 cups chicken stock or broth
I usually start with the garlic, serrano, most of the cilantro, some olive oil in the blender and puree it pretty fine. Then add everything else except the tomato juice and stock, pulse it a few more times, adding chicken stock as necessary to keep it liquid. Pour it from the blender to a large tupperware, add the tomato juice and stock to get the consistency you want. Something I've started doing as well is putting a small amount of it back into the blender when I'm otherwise done, turning it on medium speed and drizzling in olive oil to make an emulsion. Pour this back into the rest of the soup to make it really rich. Very important, too, to let it sit in your fridge before serving. It gets better overnight.
I make a bathtub's worth of this stuff early in the week and eat it for a few days. It can be time consuming. It's amazing served ice cold on a hot summer evening. You can stretch it to a full meal by adding some bread or noodles and half a grilled or roasted chicken breast. In the past I've braised chicken breast in white wine, shredded it, and put it right into the soup. Buying fresh, esp organic, produce can be expensive, but $15 of veggies will make enough soup for a few days.
I make some very simple and cheap quesadillas.
First make the rice:
Follow rice directions, but substitute one can of Rotel tomatoes for part of the water. (Pour the can into the measuring cup and fill with water up to the recommended amount). *Also, if you don't like the chunky tomato bits in your rice, you can run the Rotel through a blender*
Cook the rice according to the directions (it takes a little less time).
Once rice is ready, put some rice into a large tortilla along with a spoonful or two of beans (I like black beans) and some shredded cheese. Fold the tortilla in half and place in a hot pan on the stove, brown each side until it crisps up a little and the cheese melts inside.
I put a dollop (or two) of sour cream, a little prepared salsa, some guacamole or avocado slices on the quesadilla and eat with a fork.
You could add chicken or ground beef on the inside if desired. But they taste great with just the rice, beans, and cheese filling.
I threw this together yesterday, and was surprised my family liked it.
Dice up 2 mangos. Chop up some fresh mint and parsley. 2 Glugs of Red Wine Vinegar. 1 Glug of Olive Oil. Tiny bit of salt,bit of pepper, and a little bit of chili flakes. Stir and serve like a salsa.
Was pretty good with chicken. I wanted to add some red onion, but the ones at the grocery store were not looking so good.

For me cooking often looks eerily similar to tossing a frozen bean and cheese burrito into the microwave except for the meal I had last night which I love.
1). Buy some wild Alaska Salmon frozen. Thaw a piece and put on a pan covered in Soy-Vey. Broil
2). Make a salad with baby greens, feta cheese, dried cranberry and a few walnut pieces and cover in fat free balsamic vinaigrette.
3). Toss a few tablespoons of mango chutney on the salmon.
4). If you are working out a lot and need some carbs add a little bit of rice or bread to round things out. Fingerling potatoes are also really tasty and cook fast.
It isn't that much harder than zapping the burrito and is much better for you.
ps- Trader Joe is my BFF. The Salmon comes from Costco. If you don't have access to these stores you'll have to find substitutes.

Easy Salad - good solo or stuffed in a pita
Salad:
1 1/2 cup chopped tomato
12 oz roasted red bell pepper
1/3 cup chopped fresh cilantro
15 oz can chickpeas (garbanzo beans), drained (make sure they're the small ones)
15 oz can red kidney beans, drained
15 oz can black beans, drained
15 oz can small olives
16-20 oz quartered artichoke hearts, drained
16 oz deli-sliced mild pepperocinis (sp?), chopped in 2 or 3 and seed bits removed
Dressing:
1/4-1/2 cup feta cheese, crumbled
3 tablespoons fresh lemon juice
2 tablespoon olive oil
1 tablespoon balsamic vinegar
1-2 teaspoons spicy brown mustard
1 1/2 teaspoon dried basil
1 1/2 teaspoon dried oregano
1 1/2 teaspoon dried thyme
1 garlic clove, minced

Tuna pasta (much better than it sounds)
Start by making your pasta-I like the small twisty kind for this.
After that simply toss the following ingredients into the warm pasta and enjoy:
canned chuck tuna
olive oil
lemon
parsley
capers
salt/pepper
A friend of mine from Chili makes this all of the time. It's quick, cheap and super yummy.





I am trying to motivate myself to change my eating habits so I figured I would just make a post asking everyone for some of their favorite recipes. They can be simple or extravagant - cheap to expensive. I would like to see what kind of different results I can get on here to help give me different meal choices.
Here is one of my simple recipes that my wife and I like when we have a sweet dessert craving but want to keep it healthy (this is for two people):
2 - Single servings of low fat Vanilla Activia Yogurt
1 - jar (26.5?) of Dole All Natural sliced Peaches...drained
*can use fresh peaches, of course*
Cinnamon to taste
Divide peaches up into two bowls. Add one serving cup of yogurt into each bowl. Mix peaches and yogurt together. Sprinke with cinnamon. Enjoy!
Some might ask, "why not just get the peach flavored yogurt?" Well, I guess you could, but it just doesn't taste the same by far...try it, you'll see.
