SWEET POTATO,
I eat one a day .....

The Center for Science in the Public Interest (CSPI) ranks the sweet potato as the #1 most nutritional vegetable and rated it significantly higher in nutrients than the Idaho potato, spinach or broccoli. The sweet potato was ranked highest at 184. All other vegetables studied by the CSPI were ranked in nutritional value between 83 and 24. The CSPI gave points for content of dietary fiber, naturally occurring sugars and complex carbohydrates, protein, vitamins A and C, iron and calcium. The higher the score, the more nutritious the food. The CSPI is a non-profit, independent organization seeking to improve the public’s health.

nice. thanks for the info. definitely not the most popular of vegetables. Sorry for the novice chef question, but do you bake it like a regular baked potato? That could take some time. Microwave? Boil? What's your recommendation?

tribro, I scrub them (I eat the skins too...lots of nutrients there), pierce them and pop them into the micro just like a baked potato. You can also slice them thin and lightly saute them in olive oil (for an added nutritrional boost)...You can even whip them! There are lots of recipes out there.
You can even buy sweet potato "chips"...

I scrub as well and put them in the Toaster Oven, Takes about 30 minutes. I know the microwave is faster but I dont have a microwave never have never WILL !!! I just dont trust them :)

My wife slices them thinly (1/4 inch) and puts them into the microwave for about 4 minutes. Then they come out crispy and appear like potato chips. I think it is the only meal She looks forward to in her diet.

interesting topic.. 95% of my tournaments I eat a big dinner at Lonestar steakhouse, they bake a sweet potato and add a little bit of butter and brown sugar. More times than not I shoot well the next day after I have a potato for dinner.

Christri - Do you have a link for where you found the nutrional rankings??? I'm curious where other veggies and such rank.

ps. I am a recent sweet potato convert. They taste awesome on their own and don't need the sour cream and other bad stuff you feel the need to put on regular potatos.
