my new favorite snack
I add some ground flax to my morning smoothie. Here's my basic recipe:
1 banana
1/2 cup non-fat plain yogurt
3/4 cup soy milk
1/5 cup ground flax seed
1/2 teaspoon vanilla
1 cup frozen fruit (usually blueberries, mango, or strawberries)
additional ice cubes as needed
Don't buy the pre-ground flax. It will go rancid really quickly and is more expensive. Just buy some bulk flax seed and use a small coffee grinder ($13 at Walmart) and grind it yourself.
Do you find that the flax thickens the shake too much? It seemed that it reacted like psyllium husks the last time I threw it in my protein smoothie. :eek:
I've found that you can use ground flax sorta like you'd use wheat germ -- on yogurt, in hot cereal, pancakes, muffins -- you name it! Good stuff, and a great EFA source.
The bars sound really yummy -- almost like a cookie. Which tells me I better not make them. ;)
The key is to use enough frozen fruit and ice to get it cold enough and enough liquid that it's still smooth.
I use a Vitamix now (broke 3 blenders first) and it will smooth out anything. These are the same mixers they use at Jamba Juice, Red Robin, etc to make margaritas and smooties. I put in steel-cut oatmeal for additional non-soluble fiber, whole almonds, whatever. It'll pulverize anything.
I've been using it in smoothies too, not too thick, but I add it last with the protien powder (i'm 90% vegetarian -- the only meat i will eat is fish now )
the recipe changes depending on what I have around but it usually looks like this
added in order:
1 banana

1-2 cups of rice milk (depends on consistency)
* blend *
while it's running
flax seed, add 2-3 tablespoons
protein powder - 3 tablespoons
depending if the fruit is bland, I'll add some vanilla or some other kind of extract.
this makes enough for two pint glasses of smoothie.
I like the idea of using oatmeal. I'll have to try that.

i toss flaxseed in my morning oatmeal.... along with the walnuts, raisins, wheat germ, cinnamon, honey, maple syrup, sometimes milk powder, or anything else that around the dorm kitchen that looks like it belongs...
i used to go to my high school xc coach's house (i went to boarding school.... exeter.edu) for oatmeal every thursday morning for 2.5 years... i never even liked oatmeal before, but now i'm hooked; even so, i can't match P's... and i'll probably never have a better coach... my xc 5k dropped from 23:11 to 19:58 in 2 seasons of running with no running between seasons and from 22:42 to 19:58 PRing every race senior year season (10 weeks!!)... wow... but its still my weakest leg...

I also have a great flax muffin recipe. This will get you a lot of complex carbs and EFA in your diet. I make a triple batch and then freeze a bunch of them for later.

I can tell you that Spiffyman makes great smoothies, and I'm sure the flax muffins are tasty too.

after hearing about the benefits of flaxseed one too many times (the last straw was on oprah... :p ) i decided to look for some tasty way to incorporate it into my diet. and here it is... ta-da!
no-bake peanut butter power bars
canola cooking spray
1 Tbsp butter/margarine
1/3 cup smooth peanut butter
2 cups mini marshmallows, lightly packed
1 cup lowfat granola
1 cup rice krispies (or other puffed rice cereal)
1/3 cup ground golden flaxseed (i couldn't find "golden" flax, but it tastes fine...)
- coat an 8"x8" pan with cooking spray
- put butter, PB and marshmallows into bowl and microwave 30 sec. or until melted. blend.
- mix in granola, cereal and flaxseed
- spread into pan, flattening it evenly with waxed paper. let cool.
basically, it's a glorified rice krispies treat, but i love them... they're healthy and tasty! and easy to make and grab before a workout, class, etc. enjoy!
